Mister Jang's Gochujang Butter Steak: Culinary Class Wars
My take on recreating Mister Jang’s/Edward Lee's gochujang butter steak from Culinary class wars. In this recipe I pair a ribeye steak with gochujang butter and a creamy cauliflower mash base.
Steak
1.5 Ib | 680 g Ribeye steak 1 1/4th inch
Gochujang Butter
1 cup | 227 g unsalted butter
3 tbsp | 40 g Gochujang
1 tbsp | 5 g Korean red chili powder
1/2 tsp | 7 g Salt
2 tbsp | 25 g brown sugar
5 Garlic minced
2 Scallion finely chopped
Creamy Cauliflower Mash
1 cup | 250 g cauliflower
1 tbsp | 15 mL heavy cream
1/2 tsp | 7 g Salt
3 cloves Garlic
1/4 cup | 30 g Parmesan cheese
1 tbsp | 14 g unsalted butter
Tips:
Don't forget to let the steak rest before slicing into it at least 5-10 minutes.

What can be a good alternative for lotus root?
Feel free to try shredded cabbage, bamboo shoots, wild rice stems or water chestnuts. I believe something that will add some more crunch could be an alternative. Hope that helps!

Can I ask you a question? Do you mix your flour with cement? I’m kidding, though I’m asking because with the quantities of water flour and butter you’ve written down, my dough was nowhere near as hard as yours, i had to add 15g of flour and then constantly flour my bench because it was supersticky. Yours look like a 50% idration to me. That, or you’re using a super absorbent flour. May i ask the protein content of the flour you used?
The protein content of my flour is 3g. I hope that helps!
@@savored thanks! Since I was quite sure that the problem was in the flour type I’ve remade the dough using bread flour that i also kept in the freezer before using it. Way better final structure in the puffed pastry, and it wasn’t a pain to knead.. all the liquid got absorbed just fine. I suspect that what you call “general purpose” in the recipe, is in fact some kind of high protein, bread flour. Anyway, i saved this recipe and i will keep using it, to my taste it is the best recreation of the texture and taste of the original pastéis. Thanks a lot and keep baking ✌🏻
