Your seed packet should tell you whether your tomatoes should be grown as cordons or not. Bush varieties (also known as determinate varieties) should just be left to their own devices. Cordon varieties are best trained with a single stem and just leaves and flowering/fruiting trusses coming off the main stem. This clip shows what to remove to get a good straight cordon.
