Nepali-Style Mutton Curry | Rich and Spicy Delight (with no turmeric, chilies and ginger garlic)

Ingredients:
- 500 grams mutton, cut into pieces
- Cardamom pods
- 3 tomatoes, pureed
- 2 teaspoons coriander powder
- 1/2 teaspoon black pepper
- Salt to taste
- 4 tablespoons ghee
- Fresh coriander leaves
Instructions:
1. Heat ghee in a deep pan or pressure cooker over medium heat. Add the cardamom pods and sauté until fragrant.
2. Now, add the mutton pieces to the pan and cook.
4. Add the coriander leaves and cook until the mutton pieces are nicely browned on all sides.
5. And coriander powder, salt and black pepper, mix well and cook for a few minutes until the spices are well incorporated.
5. If using a pressure cooker, add a cup of water, close the lid, and cook for about 4-5 whistles or until the mutton is tender. If using a pan, add water as needed, cover, and simmer until the mutton is tender (approximately 45-60 minutes).
6. Once the mutton is cooked, give it a final stir. Let it simmer for a few more minutes to enhance the flavours and serve hot with, roti, or steamed rice.
