FINALLY FINISHED PRESERVING!!!!!! part 2 :)
I was struggling so much by the end of this preserving season I am not going to lie haha. I felt like my box of tomatoes was never ending haha. But I just kept reminding myself what a blessing it was to have plenty. Also don't mind the fact that lenny is constantly on the table and that I never measure anything. It is what it is at this point haha.
This was my first year making tomato soup and I honestly had my doubts with this recipe because it said not to water bath it. Just to pour it into the jars hot and let them seal themselves. I asked everyone I knew who had made the recipe before and they all said that the soup kept. I think next year however I’m going to water bath them for at least 20 min and get some sort of strainer to take the seeds out. Other then those two things it tastes amazing!!
Homemade Tomato Soup
6c. Water 3 large onions
2 ice cream pails chopped tomatoes. 1c. Sugar
6 large carrots 2c. Flour or thermal starch
3 stalks of celery. 1/3c. Salt
Dash of cayenne pepper
*I also added garlic and Italian seasoning all tossed in with no measuring
In Large pot, cook the first 5 ingredients together until tender. Blend until liquified, return to pot. In a medium bowl mix together the remaining ingredients (this is a very important step. Don’t do what I did and just toss it all in there. You can’t mix that no matter how hard you try lol) Add to blended vegetable mixture, stirring and bringing to a boil for 3 minutes. Pour into prepared jars to seal. To serve, empty jar into a pot and a dd one jar of water or milk.
Pizza/Pasta Sauce
2 ice cream pails of tomatoes
6c. Onions
2 green peppers
1 tsp garlic powder
1 tsp hot pepper of any kind (I use red chilli flakes)
3/4c sugar
1/4c salt
3 bay leaves
10 oz tomato paste
1 tsp oregano
1tbsp basil
1tbsp parsley
Cook veggies together for an hour and then blend
Add all the rest of the ingredients and cook and other hour.
Pour into prepared jars and water bath for 10 min
“therefore, since we are surrounded by such a great cloud of witnesses, let us throw off everything that hinders and the sin that so easily entangles. And let us run with perseverance the race marked out for us, fixing our eyes on Jesus, the pioneer and perfecter of faith. For the joy set before him he endured the cross, scorning its shame, and sat down at the right hand of the throne of God. Consider him who endured such opposition from sinners, so that you will not grow weary and lose heart”
