Kaya Toasts
Have you tried Kaya toast before? Is a dish that was enjoyed by Malaysian & Singaporean for breakfast. It was mostly served in "Kopitiam" Coffee shop where we pair with soft boiled egg and "Kopi" Coffee. Sometimes people just toast the bread with the oven but the best result is to charcoal grill it. This recipe is altered to utilize the pandan powder from My Blue Tea which was using a freeze-dried process from the pure fresh pandan leaves. I was amazed how the taste and texture came out amazingly good!
Ingredients:
400ml Coconut Milk
50 G sugar
1 teaspoon salt
1 teaspoon sugar for caramelize purpose
5 eggs yolks
1.5 tbsp of pandan powder from My Blue Tea
Methods:
1. Boil 1 teaspoon sugar to caramelize
2. Bring in coconut milk to boil for 40 mins ( make sure to stir constantly)
3. Then let it cool down for 10 mins
4. Pour in the eggs yolk into the cooldown kaya pot and stir it separately to not form a cooked egg, then double boil with low heat for another 30 mins until thickened
