AUTHENTIC EFO RIRO SOUP/ Recipe
**Efo Riro Soup** is a popular Nigerian dish, particularly among the Yoruba people. ### Ingredients:
- 1 bunch of spinach (Efo Tete or other local greens)
- 3 medium bell pepper, blended
- 1 large onion, blended
- 3-4 scotch bonnet peppers, blended (adjust to taste)
- 1/4 cup of palm oil
- 1 tablespoon ground crayfish
- 2 tablespoons ground pepper (optional)
- 2 teaspoons seasoning cubes
- 1-2 cups of broth (from your preferred protein)
- 500g assorted meats (beef, goat meat, or fish)
- Salt to taste
1. **Prepare the proteins**: If you're using assorted meats, season and cook them until tender. Set aside some of the broth for the soup.
2. **Cook the base**: Heat palm oil in a pot and sauté the spliced onions, bell pepper and scotch bonnet peppers until the mixture thickens and the oil rises to the top.
3. **Season the soup**: Add seasoning cubes, and crayfish, then stir to combine. Pour in the protein broth and let the mixture simmer for 5-10 minutes.
4. **Add the greens**: Wash and chop the spinach (or your choice of greens). Add it to the pot and stir to combine. Allow the greens to cook down into the sauce for about 5 minutes.
5. **Final adjustments**: Taste for salt and seasoning, adjust as necessary, and simmer for an additional 5 minutes to allow all the flavors to meld together.
Serve hot with rice, yam, or fufu for a fulfilling meal!
