Easy & Delicious Christmas Stollen Recipe - Perfect for the Holidays!

*Christmas Stollen Recipe*

_Dough ingredients:_
Milk 150 g
Dry yeast 2 tsp (7 g)
Flour 100 g + 400 g + 150 g
Sugar ½ tsp + 120 g
Soft butter 170 g
Egg 1 pc
Salt ¼ tsp
_Filling ingredients:_
Dried cranberries 200 g
Raisins 200 g
Juice and zest from 2 large oranges
Rum 100 g
Vanilla extract ½ tsp
Almonds 100 g
Cinnamon stick 1 pc
Star anise 1 pc
Cloves 2 pcs
_For Finishing:_
Butter 50 g
Powdered sugar 300 g
🔷 *Step 1.*
First, prepare the filling ahead of time. Place 200 g of dried cranberries and 200 g of raisins in a saucepan. Add a cinnamon stick, star anise, and a couple of cloves. Place the spices separately in a paper bag for easy removal after boiling. Add the zest and juice of two large oranges and bring to a boil. Remove the spices after 15-20 minutes, cover with a lid, and let cool completely. Then add 100 g of rum and ½ tsp of vanilla extract. Leave the mixture to infuse in a cool place for about 4-5 hours, or preferably 24 hours.
🔷 *Step 2.*
In a deep bowl, mix 150 g of milk, heated to about 85°F (30°C), with 2 teaspoons of dry yeast, ½ teaspoon of sugar, and 100 g of sifted flour. Cover with cling film and leave it in a warm place for 40 minutes.
🔷 *Step 3.*
Add 120 g of sugar and one egg to the risen yeast mixture. Mix thoroughly. Then, add 170 g of softened butter and mix again. Sift in 400 g of flour and add ¼ tsp of salt. Mix and knead the dough for about 10 minutes. Cover it and let it rise in a warm place for 2 ½ hours.
🔷 *Step 4.*
Drain the liquid from the cranberries and raisins. Knead the risen dough, flatten it on the work surface, and add all the dried fruits, 100 g of almonds, and 150 g of flour. Mix everything well. If the dough is still sticking to your hands, you can add a little more flour.
🔷 *Step 4.*
Divide the dough into three equal parts and roll each into a circle. Form the stollen by first folding one-third into the middle, then folding the second part on top. Press the center gently with the edge of your palm. To prevent burning, collect any nuts and dried fruits that may end up on the outside and tuck them into the middle. Place the formed stollen on a baking sheet lined with parchment paper and leave them to rise in a warm place for about 2 hours.
🔷 *Step 5.*
Preheat the oven to 360°F (180°C) and bake the stollen for 30-35 minutes, until well browned. When the stollen are ready, remove them from the oven, let them cool slightly, and brush with melted butter on all sides; you will need about 50 g for three stollen. Once completely cooled, generously sprinkle them with powdered sugar on all sides and pack them tightly in foil, possibly in two layers. Allow the stollen to mature in a cool place for 3-4 weeks.
When ready to serve, remove the foil from the stollen and sprinkle it with powdered sugar. In the video, I am opening the stollen that I baked a week ago. Slice and enjoy your delicious Christmas Treat!

Quanto ao congelamento do rolinho, sim, você pode congelá-lo! Recomendo embrulhar bem em plástico filme ou colocar em um saco hermético para evitar que ele resseque. Pode ser congelado por até 3 meses. Quando for usar, basta retirar do freezer, deixar descongelar levemente para facilitar o corte e depois assar como de costume. Muito sucesso para você! ❤️✨

Понимаю, что рецепт может показаться долгим, но зато результат точно того стоит! К тому же, можно приготовить тесто и начинку заранее, а затем собрать печенье, когда будет больше времени. Так готовка покажется легче и быстрее!
