Firemasters & Californian Grills - The Santa Maria BBQ (Asado)
Have you ever heard of a Santa Maria grill? This is a very unique style of BBQ grill that originates from the Santa Maria Valley in Central California many years ago.
The story behind this particular BBQ grill is really quite interesting, and in this video, we talk to the founders of Californian Grills, who fabricated their own version of the Santa Maria grill right here in the UK.
I actually own one of these exact same grills and cook on it regularly using our Sekelbos Namibian hardwood for maximum flavour:

There is a bit of an art to cooking over a wood fire and selecting the right hardwood is only the first step. If you would like to learn more about Californian Grills then you can visit their website at:
californiangrills.com
We also wrote a blog piece on Asado style cooking which you can read here:

    In my experience, it is about an 85 minute cook for a Tri-Tip. Start fat side down and flip. 20-10, 20-10, 10-5 Glad to see this style spreading. I love cooking over live fire.

We will try sekelbush very soon. We don't use blitz we use pieces of carton of boxes,newspapers and now got loose pieces of wood shavings that I think will work! We have kindling but not as small as your kindling. 🔥🪵Our is 18cm to 25 at the most. Excellent video!!!!!!!!!!!!!!!!!!!!!!

    Not good. Base of that oven was filled with ash when the pizza is launched. Also, what are you doing with the fire bricks? All of these manufacturers are trying to take advantage of the wood fired oven craze and don't know the proper ways to do things from fire managment to making dough, etc... I am sure the oven works terrific at making wood fired pizzas. Better to get someone to teach the correct methods. That pizza could have been replicated in a home oven....

    How long should I hold my hand over the coals to know it's right for hot and fast grilling? Thanks for the great tips!

    • @firemastersuk4265
      @firemastersuk4265 2 роки тому

      The general rule of thumb is 3-5 seconds (just above the grill) however be careful when holding your hand over hot Braai Wood coals - you may just burn the hairs on your arm!
