Pork Fried Noodles | Chow Mein | Better than takeout | Spicy and tasty
In this recipe, I am making my favourite Port Fried Noodle that is delicious and easy to make in no time. It's far better than takeout and a simple comfort food for a lazy lunch or dinner.
Ingredients
==========
250g Pork belly, cut in thin slices
6-7 cups cooked egg noodles
1/2 cup carrots, cut into strips
1/2 cup spring onions, cut in batons
1 tbsp garlic and red chilli, finely chopped
1/3 cup shallot, sliced
1 cup bell pepper, sliced
1 cup Chinese broccoli
For Marinade
------
1 tsp thinly sliced ginger slices
5 garlic cloves, lightly bashed and chopped
1 tbsp shallot, finely diced
1 pinch cracked black pepper
Salt to taste
1 tsp dark soy sauce
1 tsp oyster sauce
1 tsp olive oil
1 tsp hot sauce
For the sauce
------
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp white vinegar
1 tsp hot sauce
1/2 tsp black pepper
Method
=======
Marinate the sliced pork with the marinade ingredients and set aside for 10-15 mins.
Also make the sauce separately by mixing the sauce ingredients and set aside.
Heat a wok on high heat till it smokes. Add carrot, chinese broccoli, bell pepper , shallots, half of the spring onion, 2-3 drops of oil, and quickly flash fry to infuse the smoky flavour in the veggies. Once the veggies have slight charred marks, remove and keep aside.
While the wok is still hot, add olive oil, pork and keep stirring for 5-8 minutes till crispy and brown. Add the chopped garlic and chilli, cooked noodles and mix well. Push the noodles to the side and add in the sauce. Mix again with the noodles.
Add the sautéed veggies and give it a good mix. Garnish with the rest of the spring onion. Serve hot. Enjoy!
