You're very welcome! You can also adjust the intensity by adding slightly less or more coffee, adjusting in 1/2 teaspoon increments until you find the perfect balance you're looking for!
How many did you get with this recipe? Seems to me if you're using 2 lbs if meat, you'd not have enough room in the oven for the entire batch, so I'm curious if you can do it in one baking? They look wonderful.
If believe we were able to fit them all on a 1/2 sheet baking tray yielding around 10-12 sticks.

This dish looks similar to Bolivia’s called Pique A Lo Macho and it also includes: fries, cut up grilled sausage, cut in half hard boiled eggs and tomato. 😊 While it’s heftier we just like to eat a lot. Ty for the vid.

The problem with spam musubi is that you eat like two of those things and you're full. This is why I prefer spam nigiri.

My Korean mom put the garlic in a jar. Boiled water and soy sauce together. And then poured it over the garlic. Sealed it. Let it cool. Then put it in the frig. That was 50-60 yrs ago. I don’t remember her adding sugar. She hated us eating sweets and sugar. But I don’t remember it tasting sweet at all. It was tasty and we ate it as a side dish with the kimchis we had.
Sure - there are many different ways to pickle garlic. Most Japanese style garlic does contain sweetener though as only soy sauce would be on the salty side.

Can we add rice as a binder in the meatballs? And would searing them a little beforehand help with structure
The eggs in the meatball act as the binder once they're added to the hot soup, so no need for rice unless you want a filler. While searing is an option, as long as the soup is softly boiling when you add the meatballs, it should bind and hold together without issues.

Yes, since it's chocolate covered, it will melt, but as long as it stays under 80°F, it should be fine.
