Do you add the dried fruit to the oat mixture as you are roasting? I loved this recipe 😊I love the sweetness of the dates. I used dried apple, mulberry and raisins. Loved the combination of the spices.

I think I added too much date water. I used 15 dates and covered them with water for about 1/2 hr. I blended the tahini and dates it was very creamy, but the granola was a bit wet. I had to toast for some time. Why do you add the dry fruit to the granola to toast in the oven? It seems it would dry out more, I’m used to adding dry fruit at the end, I cut up my dried fruit and added it after the dry granola toasted brown. I love the taste of the granola but next time I’ll add less dates and less water, 💦 there’s a science to it all. Thank you for a yummy recipe.
Hi Jeannie, I agree that the moisture content with the dates and water will vary. Lesson learned right! I think I add the dry fruit together with everyone else, because there is moisture there to balance it out, and this way everything gets cooked together. There is a principle in Ayurvedic cooking that when everything is cooked together there is a harmonizing effect, and the mind/body will take in as ONE food, rather than a collection of separate food items. This improves digestibility.

You are full of great ideas!! More spices are a good idea to support the digestion of the banana. The rice milk will make it more creamy and nutritive.

i just saw churck norris mention mung beans a great food. I was wondering can I buy the dry sprouts and use them in cooking without sprouting them? Can I cook them in a pressure cooker and use in foods like I do with cooked beans? Thank you
Hi There. Chuck Norris - no way! According to Ayurveda, mung beans are one of the most easily digestible beans you can eat. Due to their small size you can cook them quickly without soaking, but soaking is even better, and sprouting is also even, even better. Here's a link to some of my recipes using mung beans. What do you think about adding 5 or 10 strands of saffron
Absolutely. Saffron is tridoshic and a cooling blood mover, excellent for urinary health.
Andrea, I'm not sure about the taste of fennel in my vegetables. I'm going to try this recipe, as well as your French lentil recipe, (the video where i found you.) I love how detailed your instructions are. You're relaxing to watch and listen to. Thanks!
Thank you Elaine, Most people are not familiar with fennel bulb, unless they have a reason to try it. It isn't easy to incorporate new ingredients, but it is worth it! Fennel bulb has a really mild licorice flavor. If you buy some and have extra, I especially like it paired with tomato so that a tomato sauce or stew isn't so sour. -Andrea

I actually just watched this video of yours, on Christmas Eve, and your neighborly style of sharing what you know about cooking to support gut health is like an oasis in a desert of glib talkers, going on and on about the state of our world. Thank you for companioning me as I relax while making quiche for tomorrow... I have been gluten and milk protein sensitive for a number of years and am always on the lookout for allergy friendly recipes that don't taste like they are missing something, and make me feel better than when I turn to manufacturered dairy analogs, which I want to purge from my life. I am also an umi plum vinegar fan! I have used it as a flavor sub for feta cheese in pasta with tasty results, and I like its complex saltiness and gorgeous color. Altho pricy, it lasts a long time in the fridge... I believe I will try this recipe with the lone butternut squash that survived the rabbits in our garden this year. Thank you Andrea!

Very informative video Andrea, except, please always always wash raw rice before cooking. Initially, when washing the raw rice, the water is very cloudy. Keep draining & rewashing the rice till the water is clear. When making kichdi the dal and rice can be washed together. Also soak the washed dal & rice in water for 20 minutes or so prior to cooking. Last tip : a quarter teaspoon of asafoetida when cooking lentils/ dals, helps in digestion.
Hi there, and thank you for this reminder. What you said is EXACTLY what I teach when making basmati. For khichdi, I always give one rinse. So after soaking the dal, and rinsing the dal, I add the rice and rinse once. Drain, then add the water and cook khichdi.

Good job ma’am! I make it all the time. With potatoes peas and peanuts. With a side of “Chass” a cold yogurt soup or drink. Made from cilantro, chilis and garlic. With salt and ground cumin. Very satisfying dishes. Indian chicken soup/ comfort food. 😊

As a Pitta/Vata- I'm wondering IF the fennel's diuretic quality will promote more drying for me. I've been battling dry eyes here in Wisconsin. Any quick thoughts?
Hi Lisa. Fennel is diuretic, but it is also estrogenic and moisturizing. It soothes burning and builds despite it's diuretic quality. Fennel is one of the few tridoshic vegetables, so I think you would be okay! For dry eyes, try using ghee or castor oil under and around the eye before bed. The oil will nourish as it penetrates through the skin around your eyes.

Hold up did grandma just not go to biology class? Isn't meat easier to digest than greens and stuff. I'm no expert let me know
Hi John. It depends on each individual, but in Ayurveda, all proteins are considered heavy and difficult to digest. If I had to order them from hardest to easiest, it is likely legumes, then dairy, then meat. Meat differs by type also. When properly cooked vegetables are easy to digest. There's a lot that goes into cooking for good digestion, including spices, healthy fats, and the right combinations. Thanks for the comment!
