what can I do if I can't find the rice we use back home can I do this with Sweet rice, sushi rice or jasmine rice as replacements ? Good Video by the way!!!
I know the pain of not having Suwadel rice. My variant is Basmati - comes out beautifully with it. You could use jasmine rice but it tends to be a bit hard than normal kekulu rice we use. You need a soft rice for a gooey kiribath… hope this helps

Would it be an issue if I was to add garlic at the beginning with the salt and pepper seasoning?
Hi! Sorry for the late reply. You could, but in doing so, the garlic might release the burnt caramelized flavors as it’ll get cooked longer. It could overpower the flavors of the prawn too. Whereas when you add later, garlic will only release the fresh tingling spicy flavors and that’ll work well here. But it’s up to what you like to taste. So, of course you can! 👍
