🍒Cherry pie. So little dough and a lot of filling!🥧
Cherry Pie Recipe
Ingredients:
For the crust:
• 2 ¾ cups flour (350 g)
• ½ cup + 1 tbsp unsalted butter (120 g)
• 2 eggs
• ⅓ cup sugar (75 g)
• 3 ½ tbsp milk (50 g)
• 1 tsp baking powder
• A pinch of salt
For the filling:
• 2 ¼ lbs frozen or fresh cherries (1 kg)
• 3 tbsp cornstarch (25 g)
• ⅔ cup sugar (140 g)
For brushing the pie:
• 1 egg yolk + 1 tsp milk
• Sugar for sprinkling
Instructions:
1. In a bowl, mix the eggs with sugar, milk, and a pinch of salt.
2. In another bowl, mix the flour with baking powder, then rub it with cold butter until it forms crumbs.
3. Add the egg mixture to the flour and butter, and quickly knead the dough until combined.
4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
5. For the filling, take thawed cherries (don’t drain the juice), mix the cornstarch with sugar, and add to the cherries.
6. Stir the mixture and heat over medium heat. Stir constantly until it boils, let it simmer for 30 seconds, then remove from heat.
7. Transfer the filling to a plate and let it cool completely.
8. Take the dough out of the fridge, cut off ⅓ and return it to the fridge.
9. Roll out the remaining dough and transfer it to a pie dish, trimming the edges.
10. Spread the cooled cherry filling evenly over the dough.
11. Take the remaining dough from the fridge, roll it out thinly, and cut into strips 1-2 cm wide (about ½ inch).
12. Arrange the strips in a lattice pattern over the filling.
13. Brush the pie with the egg yolk and milk mixture, then sprinkle with sugar.
14. Bake in a preheated oven at 350°F (180°C) for 35-40 minutes until golden brown.
15. Allow the pie to cool completely before serving.

Кто будет делать взбейте яйца все таки миксером. А вместо разрыхлителя сода уксус . У меня плохо поднялось из-за того что я пренебрегла этим.( В крем я добавила немного масла сливочного, можно еще немного лимонного сока или сметаны/сливок, иначе мой сливочный сыр не мог размещаться с сахарной пудрой…
