Lol, for those that arent familiar; there are some ini settings you can change to get rid of some of the more (in my opinion) "crap" aspects. Ones Id recommend 1) the food thing is only designed to be tedious in the beginning; once you get a hunger axe, eating literally doesnt matter any more; and its really not THAT far in. You can turn it off; its called "spice of life". I find it annoying and doesnt do anything useful. You *CAN* keep on the variety thing that gives you hearts; so it still incentivizes you to make every food item you can. 2) "kamikaze revenge"... by default theres a 10% chance animals randomly explode. I HATE this mod and I just turn it off; I think its under "ender zoo" 3) GTNH base settings -> pollution -> off. lol Pollution is so dumb and its just not a fun mechanic. It doesnt even make the game "harder" or anything; its just a silly mod. 4) The one "cheaty" mod setting change I do is enable crafting large back packs and enabling carrying of 6. Having 6 backpacks is nice, and being able to craft them is nice too. Goofy trick I found out, you can put dungeon blocks into the ore finder wand to find dungeons under ground lol.
