Recipes from the Wheelchair is recipe library from a certified chef using wheelchair. The basic purpose of starting this channel is to encourage people with disabilities, especially those using the wheelchair that it is not difficult to venture inside the kitchen and cook. KABAB KARAHI
As they say, necessity is the mother of invention. And so this dish came into being. On Sunday afternoon or evening I was pressed for time, After watching the 3rd ODI match between Pakistan and South Africa.
A quick fix for dinner was this kabab karahi as I already had precooked seekh kebabs in the freezer. I knew it was going to come out lip smacking as I had already made this before and it was a hit.
Chicken Seekh Kabab is a flavourful and tender dish made from seasoned chicken grilled to perfection. The coming of flavours was such a delight.

Ingredients:
• 2 TBSP. GHEE
• 12 CHICKEN SEEKH KABABS
• 2 GREEN CHILLIES, CHOPPED
• 4 TOMATOES, PUREED
• ½ CUP YOGURT
• 1 TSP. PEPPER POWDER
• 1 TSP. KARAHI MASALA
• 2 TSBP. CILANTRO, CHOPPED
Method:
1. Heat ghee in a skillet.
2. Cut the kababs into bite size and add to the skillet with green chillies. Fry till kababs are heated through.
3. Add the tomato puree and cook till oil separates.
4. Mix the pepper powder with yogurt and add to the skillet. Mix well.
5. Add the karahi masala. Mix well.
6. Add cilantro and mix well. Cook till oil separates.
7. Serve.

This looks very good. Great recipe and presentation! I've never used Phyllo dough. Is it hard? Also, would using melted butter rather than olive oil work? Thanks for sharing!
Thank you, Phyllo dough is a very delicate pastry sheet. It tends to break and get dry if kept uncovered for a long time. Pull the frozen package of dough out of the freezer the night before you want to use it. Put it in the refrigerator overnight-phyllo dough takes about 8 hours to thaw. After that, leave it out on your countertop at room temperature for another hour until the sheets are completely pliable. Only then is your dough properly defrosted. Usually, we just work with a few sheets, keeping the remaining covered with a damp towel. Pastry chefs say that it cannot be frozen....I usually refreeze the leftover! And yes, you can use butter instead of olive oil. If using salted butter, adjust the salt in the filling accordingly.

That looks delicious. I like to cook and I like caramel but I've never made caramel before, you made it look easy. You sure made the dessert look so good when you finished. Thank you for sharing this recipe.
Thank you so much. Actually I don't even know how to make caramel! Its just a hit and try. Basically, if you have the patience, which I don't (lol), is to allow the sugar to melt, crystalise and then melt again without stirring. You can add butter after to turn it into a sauce.
