In 2013, we purchased raw land consisting of just under 5 acres of woods. We cleared around an acre and in 2016, started the process of designing and building a home that would reflect us. After a year of fine tuning, we stepped into our little dream in 2017 with no plans of homesteading. By 2022, we were able to raise/grow about 80% of what we consume.
We invite you to join along as we cover everything from raising livestock, laying out a beautiful space, to growing and raising food, what to do with that food, a few “how to’s” and just the daily homesteading life.

I just did this with nearly 11 pounds of wild Fox Grapes (Vitis labrusca) from my back yard. I peeled each (no small undertaking for 11 pounds of grapes) and cooked the skins separately as did you, however once cooked, I use an immersion blender to thoroughly puree them before recombining with the strained grape pulp and juice. There are powerful antioxidants in fox grape skin, so I can at least pretend it's a healthy condiment despite all the sugar I added per the recipe.
That’s a lot of grapes! If they count ketchup as a serving of veggies then surely this counts as a serving of fruit! 😆

Your don't add curing salt? And how many pounds or kilos can you brine with those measure's
Not entirely sure but our hams are big. An easier ratio to go off of would be your target liquid amount which is between 3-4 gal. The closer to 3 gal, the more concentrated the brine. From a what I’ve found, if you can let it brine for at least three days, that concentrate ratio doesn’t matter as much.

We don’t have a Costco, so we shop the sales at the regular grocery stores for items such as dairy, paper items, cleaning items, and meats other than chicken. Because of our gardens, orchard, and chickens, we probably produce about 75% of our food. We also buy long-lasting grains in #10 cans from a bulk store (from which we make our own whole wheat bread). We feed our chickens as much as we can from our yard (plus wheat & some pellets), and we make our own compost. We still have a ways to go. Every year is a new adventure.

What was the question?
Hi. For years, I have used dry Bay Leaves in our 5-gallon buckets of flour. I break a bay leaf in half and put it in the bottom of the bucket; add the flour; then break another bay leaf and poke it down just slightly in the top of the flour. Then, put the lid on the bucket. I’ve never had any bugs in the flour. Even in the bucket being currently used, I don’t reseal the lid, but just lay it on top of the bucket, and never have bugs because of the bay leaves. Good job getting your buckets! I hope they do well for you!
This would definitely be worth trying as extra precaution. The beetles seem to be so bad here.

How did green grape turn in to purple jam.?
Good question. Someone else was asking this as well. We use natural, unbleached sugar. As it cooks, it gets darker turning this more to a dark greenish brown. The skins also darken as they cook. The pulp/juice still comes out that whitish green color so I think it’s just a combination of the first two things.

Guys I change oil in generator after 24 hours run time. I don't know and ruined the first one. Run for 4 hrs am and 4 hrs every 12 hrs . Plan as much it that time. This was my experience after hurricane damage and no power for 4 weeks. In the middle of 4 hrs get out drinks and food for the day. Shower etc. Refrigerator and freezer will be cold. Cold showers. Grill outside with propane or wood . Etc
@@stephenamatosr9089 yes...changing the oil in a brand new generator after the first run is crucial to eliminate metallic shards left from manufacturing. Thanks for the reminder. I have to do that myself.

Jeremy & Cass...this is Jess' friend from NY. Living here in the frigid North, the 1st thing Father impressed on me was a secure power source. Losing power for days here in winter can be a life-threatening situation. Also, as a single 62 y/o SSDI recipient, purchasing a whole house generator is out of the question. But as a former hydroelectric plant operator and former physical plant stock procurer for our SUNY hospital, I know how to research the best and most cost effective solutions for mechanical problems. I wrote & posted on Friends of Roots and Refuge what I did to secure power here in my 140 y/o suburbia home, with built-in redundancy using a dual fuel generator AND some solar power stations. I actually schooled my electrician on the inexpensive interlock, as most people think an expensive transfer station is the only way to turn a portable generator into a whole house power source. Not so. If you'd like to learn more about my power solutions, let me know and I'll share everything I've done on a shoestring here. Blessings.

I guess it's pretty common depending on one's culture. Glad to have found your method too. I'll try it with my cast iron dutch oven.

The reason we store jars without the ring is that it is easier to see if the seal has been compromised. Also, if you stack them, be sure to put a piece of cardboard between the stacks. The card board spreads the weight of the jars helping to keep the seals from being compromised.
