I grew up on Corn beef and rice as well and I still love it. My husband says he ate to much of it as a child so he don't want it anymore but I love it. Your meal look delicious.
It's surely is a classic. What I've observed is the quality of cornbeef we get now, kinda disappointing.

Boy that look good! I use to be in foster care and a Trinidadian family was my first home. I lived with them for 10 yrs and Sunday supper was always the best! I miss the food so much.
