Vegetable ghee rice/ vegetable neyichor recipe Ingredients 2tbsp ghee 1 bay leaves 3 green cardamom 4-5 peppercorns 1tsp cumin seeds 1 small thinly sliced onion 1/4 cup finely chopped carrots 2tbsp chopped French beans 2tbsp corn 2tbsp chopped capsicum 8-10 cashew 1 slit green chilli 1 cup zeera rice / jeerakasala rice Few curry leaves Salt as per taste 2 cups water Method: In a pressure cooker add 2tbsp of ghee, then add the whole spices and lit it sizzle. Add finely sliced onion, and fry till slightly golden, add the cashew and chopped vegetables and saute for a min. Add 2 cups of water and salt as per taste. Now let this come to a boil. Once the water starts boiling add the rice and give a mix. Let it simmer 1-2 minute. Add curry leaves, and cover the lid, and cook until 2 whistles. Once the pressure releases remove the lid, and mix gently. Serve hot with salads and raita.
