Might be a good idea to include a note to remove the flowers etc. before lighting, as they'll function like additional wicks, soaking up wax and catching light from the actual wick/s; and that, with a hot spot by the ceramic etc. can cause cracking/shattering of the vessel with thermal shock etc!

Question.. i thought you were only meant to simmer and never boil? Or was that for chicken stock?
Hi! I could be wrong but I always bring my stock to a boil and then reduce the heat and simmer anywhere between 8-72 hours. From what I’ve read you don’t want to boil bones (simmer ok) for long period of time as the bones will start falling apart. Hope this helps!!

I like to switch it up! Sometimes cloves, coriander, bay leaves, mustard seed, fennel, anise, or/and chili flakes :)
Cut the onions from top to bottom instead of side to side. They will come out way crunchier
