Council inspection coming up so I reckon this is the tidiest the bakery could ever be😅 so why not do another tour as a lot of things have changed in the past two years of running this micro bakery from our house.
Good news is, you don’t need much to start a micro bakery. This studio is only about 6-8 sqm.

how many loaves does Rofco b40 fit? And how big are the loaves? :)
Hi, I can fit 12 loaves in a B40 at once. So each layer 4 loaves. They’re usually 500g flour, 72% hydration. Wet weight is around 960g. Hope this helps.

What size and brand mixer do you recommend. I’m thinking 30 qt.
Hi! My mixer is 30 ltr and the brand is Borrelli. Can mix up to 20 loaves of sourdough each has 500g of flour and hydration around 72%.

How do you like your Rocco B40?
It’s been great. I’ve had it for more than two years now doing at least two big bakes weekly. It’s well built to last. I can bake up to 12 standard loaves each batch (500g flour, final weight close to 1kg). Any specific questions let me know and I will consider making a video about the baking process with it.😊

You must be in Australia. Because you are using product brands I know and Celsius. It is always a pain having to convert from F to C. Cheers and your recipe is next on my baking list. I like it when people just upload their setup and how they do coffee in the morning, it's so easy to get caught up in coffee youtube and want to make the perfect latte every morning, when I saw you pour your latte I went "huh, maybe my latte art can be simple" so thank you for thay.
😂 I’m glad. True. For me, it’s about enjoying that cup of coffee as we’re not James Hoffmann or Chris Baca anyway 😀Also don’t have the expensive equipments.
I have basically same setup. Bialetti Moka pot plus Bellman is a bombproof combo that'll last longer than I will.
I have replaced the Bellman with a NanoFoamer. May sound like a downgrade but it’s pretty powerful and produces quite decent foam and saves some time too😀

Thank you for sharing your recipe. I'm 65 and that I can remember, I've never baked bread before. After watching a dozen similar bread recipes, I picked yours for making my first loaf. The only difference in the way I made it, was to use 1-1/2 tsp salt rather than 2 tsp (I'll use 2 next time), I also forgot to cut the top of the dough after putting it in the dutch oven (I won't forget next time), and I removed the parchment paper when I returned the loaf to the oven for the last 10 minutes. The temperature confused me a little and my wife who is a retired Home Economics teacher and cook suggested the 250 degrees was in Celsius. She confirmed it by watching another of your baking videos where you baked at 180 degrees. So I baked the bread at 450F. Your recipe and instructions worked wonderfully well and the bread was very tasty with a crunchy crust and soft inside. I am impressed that your recipe with 5 parts bread flour and 1 part whole wheat flour makes a denser loaf than the all bread flour recipes. Again, thank you for sharing. I'll be making this bread again soon.

Thanks for watching 🙏 I’m not an expert but here’s something to check based on research: 1, Was your starter ready? The levain should have doubled in size and pass the float test when used for baking. 2, Too much water? My flour water ratio was about 75% for the dough. If you use more water, it could result in a stickier dough too. 3, Over fermentation. The sourdough fermentation aims for about 50% rise in size when it’s ready for shaping. Some people keep it room temperature, some in the oven with lights on, Some in the fridge. Keeping it in a clear, straight sided container helps to track the rise and you can see the bubbles easily. 4, Too much whole meal or rye flour? This could end up with a stickier dough too. Maybe start with 100% bread flour. I used a 450/50 ratio which is about 12%. Hope this will help! Happy baking and Happy New Year!

It doubled or close to it but was spot on what I needed so didn't test it. I definitely did not have the action/bubbles you had at the end of the bulk fermentation (2:37 in your vid).
