I am watching the video from ZANZIBAR ISLAND....
You don't need to score the meat. It will absorb every liquid there while simmering. Also, use a tong or something else to flip the meat. Poking it with a fork or any other sharp object, ends with losing juices from the meat. Mushrooms have to be sauteed. You should fry those mushrooms with the onions, before using broth or water. You could use a bigger or wider pan just to be more comfortable. You could lower the sound of the music because if the video was longer, this constant tune could be irritating.
I hope it's real butter and not Margarine. My man your narration is spot on you dont need that accompanying music. Id serve baked yams and wine with the mushrooms & pork

Tried it twice good receipe your frying pan has to be super nonstick because some of the ingredients don't cook well and will stick and burn tweek it and it's great.
