Making Scrapple in Central PA
Randy Barger got his pals together and made a kettle of Scrapple on a cold winter morning in Central Pennsylvania. Scrapple making skills are handed down through the generations in farm country. In the past farm families would get together in the early winter and make use of the scraps leftover from the season's butchering.
Scrapple making is becoming a lost art. Randy and his friends hope to pass the recipe and process along to their sons and daughters. It's a great time for friends and tasty food!

The 2016 Reverse car drawing was a grand success. This year's prize was a fully tricked 4x4 Jeep with all the upgrades needed ]to be a the perfect off road thrill in Central Pennsylvania. The drawing benefits both the Bestwick Foundation and Penn State's Coaches vs Cancer. Thanks to all that attended for another successful year!

The State College Spikes is big on fun! Group nights at the Spikes are even more fun! Coaches vs Cancer of Penn State hosted a night for their volunteers at Medlar Field to see the hometown Spikes win! Contact the Spikes to get information regarding their group packages and ticket prices. Nothing beats a night out of food, fun, and baseball! It's even better with friends!

After going through the trading, showing the different places that CIT is used, they should have used a different actor because the video gives the impression that the guy went from home to ambulance to auto accident to prison. That creative directive part could have been done differently.

Thank you for this video! I thought the video was well shot and edited. And I liked the music. I would have also liked a little narration so we can learn about the ingredients and process. You also answered a very important question that is not readily obvious. From the video, we now know that all of the ingredients are technically cooked and ready to eat. When we fry the Scrapple, we are just browning it to add a little more texture.

Making a 10gal kettle of pan huas today. Saved 2 heads, bones, heart and liver. For the uninformed- we skin the heads, remove the eyes and cleave the skull in half and remove the brains. We add several garden onions and bunch of celery to the broth as well. We use salt, pepper, buckwheat flour and cornmeal as the only additives. Roughly 2 parts cornmeal to 1 part buckwheat. Damned good stuff.

His "actors" (I use that term loosely, speaking for myself!) were Greg and me, our friends (and our 3 oldest kids) It was a Fun time! In case any of you are trying to figure out the "Cast"... for "Outlaw" it was, Singer: Mike Schafer, The Outlaw: Greg McCloskey, Girlfriend: me, Father: Mike's Dad, Lawmen, Ed, & Steve McCloskey, Bill Cargo, Jim Clemmens, Steve Wasieleski, Mark Schafer, Kevin Rankin. Horses: Pepper, Raider, Casper, Goldie, Scoobey. (For the OakRidge neighbors familiar with our old "White" swayback, horse, "Raider"... he is the Fast, Gray horse, Greg is riding! (Raider's Glory Days!) The second video, "White Hats" was actually made first. It was shot at our barn and fields. Bebout's Farm is visible in both videos. The best scrapple video I've seen and it only took a minute. The only thing missing is the cast iron skillet.
Proud to live in PA where we have a time-honored food like scrapple. Some might be scared of it but it's my favorite guilty pleasure. Taking food that would be thrown away and turning it into a delicious sausage loaf. Pan or deep fried, we take what most would throw away and turn it into a delicacy.
PA has a lot of stuff we have scrapple we have the Philly cheese steak and not even food. We have Large area for game, mountains and nice towns, ever been to Jim Thorpe?

I’m from south eastern pa, and all my family grew up eating scrapple. Im not a huge fan of it, if I do eat it I prefer it fried very well! I’m not into any of that soft stuff oozing out of it. I know in my family(aunts, cousins, uncles etc) I’ve seen some eat it with nothing on it, some with ketchup and some with syrup. I prefer the syrup. Wondering what’s the preferred right way to top this scrapple?
My mom grew up on a farm in lower Bucks County, PA, I grew up in the Poconos, we raised and butchered our own hogs, ‘she’ and only she would make the scrapple, it was outstanding

There's always advantages and disadvantages in every method. You're only major disadvantage that I can see is you cannot achieve a monotheistic concrete shell. For those in seismic zones this could be a deal-breaker.

You're talking this is quality scrapple. The stuff you get at a store is probably processed dog lol.
"Pork stock, pork, pork skins, cornmeal, wheat flour, pork hearts, pork livers, pork tongues, salt, and spices" are what you'll find in a commercial brick of Habbersett or Rapa Scrapple if you buy it at a store in the Philly or Baltimore area. When I visit home I get some at a diner every time, like a ritual. I find scrapple gets a bad rap it doesn't necessarily deserve. It's like a sort of soft, mealy sausage with a unique flavor. Jones Sausage owns Rapa and Habbersett alike, I would think if they used whole hog heads the ingredients would include pork lips, brain, eyes, and so on. I live in New England now and it's hard to get.
