It was 10 pm and we gathered for Pest Infested@JJ Atlante Pub, 39 Duxton Road on 1 February 2019 for Ernie Koh’s 71st Birthday Gig, because Jeffrey Low and I speculated that we better catch Ernie’s performance as we were all aging gracefully now, and get to listen to the hard rocking vibes of Ernie’s R&B one more time, ever since Ernie Koh, and Tony Cheong started the band 52 years ago in 1967, from Ernie’s iconic rendition of Crosby, Stills, Nash & Young-Almost Cut My Hair, (Ernie had a Birthday and CNY haircut just before the gig) to vintage John Mayall. The current line features Ernie Koh, Lead Vocalist and Harmonica; Chris Ong, Lead Guitar; Tony Cheong, Rhythm Guitar; Pat Loh, Bass guitar; and Judy Cheong, Drums, with a guest cameo singer, Alvin See who sang with Tony on a numbers of songs. This is the current line-up for most of the years since the band officially disbanded in 1978. Please find below the history of the Pest Infested from the start by James Tann: Princess Elizabeth Estate: The Pest Infested ijamestann.blogspot.com/2012/07/hillview-alive-with-sound-of-music-2.html “The Pest Infested Hillview alive with the sound of music (2) The Pest Infested band was formed in 1967 by Princess Elizabeth boys John Ali and Ernie Koh. In the beginning, they had Francis Chan (lead guitar), Sng Say Juan (drums), John Ali (Rhythm guitar) and Ernie Koh (Bass guitar/Vocals). This was the founding lineup and the band specialized in hard core Blues music. In the early days, the band played gigs mainly in British forces camps and at 'Tea Dances' but soon had opportunities to play support at the Golden Venus Nightclub at Orchard Hotel. Back in the late 60s, Golden Venus Nightclub was the apex for band boys. If you were somebody, you had to be playing at the Golden Venus. I guess the nearest thing today would be like comparing it to Zuok or St James today. They also landed a stretch at the London Scene at Hotel Malaysia - another happening place at that time. As common with bands in the 60s, there were lots of lateral movement among musicians, back ups and vocalists. So it was not uncommon for band members to leave and new musicians joining the band later. For Pest Infested, quite of number of estate boys played for the band and later moved on to others. Musician who did some time with Pest Infested included Gerry La Chica (The Flybaits) Robert Suriya (Naomi & the boys) Richard D'Silva Jack Elias Lim Thian Soon (Straydogs) David Ng, bassist Chris Ong, lead guitar Philip Hardie. Even Rex Goh auditioned once for Pest Infested but found he wasn't compatible with the blues genre that Pest Infested played. Rex Goh later became the guitarist for the Australian group, Air Supply. I managed to contact Tony Cheong, one of the final members, who wrote me as follows:- Hi James, Here is the pic of us (above photo), it was taken near our practice studio at Chestnut Ave in 1974. Before Chestnut, our equipment & studio was at a kampong house in PEE ..... remember the forested area at the fringe of the estate, beyond Kum Sung's block. We rented a whole kampong house with grass laid compound from a family who had moved out, for just $40/month. And we would practice & blast our rock music & no one would complain cos the nearest kampong house was about 70 m away. Cool huh! The guys you see in the photo are actually 3rd generation PI, except for Ernie(founder) & Shah(2nd gen). Well, we went on to play for another 4 to 5 years until our day jobs became too much of a commitment to continue the music. I think the last gig was at a club called Queen Bee at the Queens hotel at Mt Elizabeth. I remember your dad Tann Yean, he used to hang out with my dad & Ernie's father, Koh Keng Kwee. Slow Wine Anthology JSV Interviews Laurent Richard of Artisanal & Terrior Wines At Jade Palace Seafood Restaurant, Forum B1 Friday, 26 January 2018 12.15 to 14.15 hr. Hi Guys, Laurent Richard, aged 34, a Singapore Permanent Resident, and married to a Singaporean Lawyer, with a young baby son, Oliver, epitomizes the new breed of Singaporean Wine Distributors that is making the Singaporean Wine scene more vibrant and competitive with the other wine hub and knowledge centre in Asia outside of Japan which is a large and specialized market, Hong Kong. Laurent, first came to Singapore in 2004, as a young intern while studying at Grenoble, with eWineAsia, under the mentorship of Bruno Valliant, and returned to France after completing his internship, and when he got his Masters in Wine Distribution from Montpelier, and, after searching for the right job for six months, the memories of Singapore pulled him back when his mentor, Bruno Valliant, offered him a job as a sales Assistant with eWineAsia in 2006. Bruno Valliant has also left eWineAsia and now has about 4 wine bars in Singapore. So when I asked Laurent what made him deicide to strike out on his own after 10 years with eWineAsia to form his wine import and distribution company with another partner in 2017, he said that after spending 6 months back in France when he departed from his old job, he felt that the time was right for him to form a lasting bonds with the winemakers, who crafted the best wines from the wine grapes from their terriors, and to create a lasting professional relationship with his Singaporean entrade and private sales customers, who are all becoming more discerning and knowledgeable with their tasting palates, and in time to come in the region. Currently, he has about 17 winemakers in his portfolio, some of whom has a very limited production of 2,000-8,000 bottles per annum, and Laurent’s relationships are good enough to get about 100-240 bottles, as part of the worldwide allocation for his market share. Hi Guys, Slow Food Anthology Osaka Torafugu No Kai & Masato Sawahara Equarius Hotel, Resort World Singapore, Wednesday 27 September 2017 1800 to 2245hr KAT, the Singapore-based International Business Development company, assisted Osaka Torafugu No Kai Company Limited , and its owner manager, Masato Sawahara, to put together a by-invitation Tora Fugu Tasting Dinner Party for 100 persons on Wednesday, 27 September to savor Japan’s finest delicacy. Masato Sawahara’s goal is to strengthen the relationship between Singapore and Japan, and, as stated on the lovingly presented and printed invitation card, this event is not about business, but about a dream. From my conversation with Sawahara san, and from my culinary experiences at the superb dinner, and the post dinner speech, I would say that Sawahara san is both a man of conviction, and honesty; a gentleman, whose a heart is filled with kindness. What is Sawahara’s dream? To share with us, Fugu as one of the roots of Japanese culture, and why it should be called the honor of Japanese cuisine. I am not a mind reader, but as a food correspondent, I can only judge a man by the strength his action. And this is my summary of the reflections on the execution of this superb and most memorable culinary event, the likes of which the lucky ones would only savor, perhaps, once in a life time. Overall, the cuisine is both balanced and exquisite, and entirely in the realm of all the senses. Sawahara san and his people did the following amazing things: • Closed his exclusive members’ Tora Fugu club restaurant in Osaka and brought his entire kitchen and service staff of 33 persons to Singapore, including the serving table wares from his Osaka restaurant; • Contracted the ex-Forest Restaurant, located just after the Equarius Hotel lobby area, utilized the Lobby and the Patio to accommodate his dinner guests with a pre-dinner cocktails; • Brought in live Torafugu (Tiger Blowfish), by air freight to Singapore, as this was a privately catered event, so that his guests would experience the very freshest of this delicacy; • Assigned each one of his service staff at each table ( I was on Table 13 and we had the lovely Irin Hayashi san meticulously serving and caring for us) to light up the warmed Hirezake as it is poured into the special ceramic cup with the dried fugu fins, to allow the sake to seep and to absorb for about 5 minutes for the aroma from the grilled fin, and, also to grill the Tora Fugu fillet spiced with garlic and special soya sauce on a special ex-Japanese Grill, which is one of the many such grills, specially flown in for each table; • Arranged for an English speaking MC, and for two pianists, Masako Aratake and Gohei Nishikawa to fill our senses with lovely pieces before and after dinner; • The menu comprised the following: i) Warm Pink Sake with Grilled Fugu Fins ii) Parboiled Fugu iii) Fugu Soup with Powdered Arrowroot iv) Fugu Sushi v) Broiled Fugu with Garlic vi) Broiled Fugu Flavored with Special Soya Sauce vii) Deep Fried Fugu Flesh viii) Tecchiri (Fugu Hotpot Dish), served in a lovely packed Paper Pack, steaming hot. ix) Fugu Porridge with vegetables and sliced seaweeds to taste. x) Dessert • Present his personal and frank views on his passion in his after dinner speech, including why preservation of Tora Fugu liver over 18 months is safe for human consumption, and we had some small toppings for one of the dishes that evening; • Honestly disclosed why he had to close his Tora Fugu restaurant in NYC because of his criminal records. • And last, but not least, presented his wife with a huge bouquet of red roses as it was her birthday. Hi Guys, Slow Food Anthology JSV Showcases the Arrival of Kobe Isoda Ranch Beef in Singapore At Enbu Izakaya and Singapore’s Iconic Scenes Tuesday, 3 October 2017 Since Saturday 16 September when we did a trial dinner of the A5 grade Banshu Wagyu Beef (Black Japanese Cattle) from Cows raised at the Kobe Isoda Ranch (“KIR”), which is owned by Proprietor Hiroyuki Isoda., other private dinners have loved the dishes made with them. And, we are now waiting eagerly the arrival of the Kobe Isoda Ranch Beef in Singapore, which shall be branded as Kobe Iaida Ranch beef, subject to finalization of commercial terms and conditions for their import into Singapore. KIR has 20%is Kobe Beef, and 80% is other Blood mixed at the ranch, The Beef which we received earlier were not the "Kobe cow” and is from is the "Banshu cow", because the parentage of the father and mother cow were from Gifu Prefecture, but whose meat that is produced to meet with the Kobe Beef specifications set by the Kobe Beef Kobe Beef Marketing & Distribution Promotion Association, with the appropriate markings on the carcasses and certifications. We have assisted C.E.O Masakatsu Kometani of OSK Global Business Promotion, based in Osaka , and who has been retained by Kobe Isado Ranch to explore export opportunities for their beef overseas, with the production of these video shootings from the Singapore end to assist with the successful culmination of this project. Hi Guys, Slow Food Anthology Dae Gweol Restaurant 65 Tras Street, Singapore 079004 5 October 2017 I dined at this newly opened Korean restaurant on Thursday, 5 October 2017 and had two of their signature soup dishes, GalBi-Tang, Beef Short rib soup with radish, leak, and stripped sliced eggs, and DweaJi-GukBap, Pork bone soup boiled with pork, chives and Korean chili, and especially enjoyed the flavour of the GalBi-Tang, which have been slowly boiled over 6 hours and reflected the soft feminine touch of Chef Toni, youthfully invigorating and pure. The short ribs were also juicy and tender. The SuYuk, Tender boiled pork with kimchi, and soft bean curd, and wrapped with cabbage and Korean white bean paste, was my pick of the evening. The slice of belly pork was done to a tee and one could taste the combination of fat and lean meat with the flavoring of the kimchi and the Korean bean past all taken in with the fresh cabbage leaves, and the Korean brown rice, nicely done with slightly cracking of the overcooked part to add in a variety of feel with the pork.. All in all an interesting meal and one that diners should explore especially for the beef broth which comes with extra helping with no charge.
