Simply put, we are not laughing at the Asian impersonation, we are laughing at the dim, biggoted white man doing the impression. He's a fool, a buffoon, a man totally lacking in self awareness and he's the nub of the joke. I totally understand why someone would be triggered by the scene, but fear not. The joke is most certainly on him. I think that kind of joke was told better in Inherent Vice mind you. Bigfoot asks the Asian cooks serving him pancakes for 'muto panicakeu'. Having spent time with Bigfoot, we already know he's an arrogant, foolish throwback to the 1950s, so we get the joke when he starts shouting at the cooks in what he thinks is Chinese.

Some people want to be offended. PTA is a genius. The scenes were hilarious. The husband is clearly the butt of the joke and symbolic of commonplace racial and misogynistic attitudes of the time, even within marriages.

I watched this recently, and the butt of the joke is never the wife or Japanese culture, but a transparently ridiculous and racist white man. We are laughing AT Jerry, at how ignorant and sadly typical he is of a certain type of person in 70s LA. (This observational humor occurs throughout.) I don't think laughing at a racist is racist, but apparently some people disagree.
