Here's a simple recipe for Matar Aalu ki Sabzi (Peas and Potato Curry):
*Ingredients:*
- 2 medium-sized potatoes, peeled and cubed
- 1 cup fresh or frozen peas
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons water
- Fresh cilantro, chopped (optional)
*Instructions:*
1. Heat ghee/oil in a pan.
2. Add cumin seeds and let sizzle.
3. Add onion and cook until translucent.
4. Add garlic and cook for 1 minute.
5. Add potatoes and cook for 5 minutes.
6. Add peas, coriander powder, turmeric powder, chili powder, and salt.
7. Cook for 5-7 minutes or until potatoes are tender.
8. Add water and stir.
9. Serve hot, garnished with chopped cilantro (if desired).
*Variations:*
- Add other spices like garam masala or amchur powder.
- Use baby potatoes or diced bell peppers.
- Add lemon juice for extra flavor.
