Oto tradycyjny przepis na bigos, jedno z najbardziej znanych polskich dań: Składniki: 1 kg kiszonej kapusty 0,5 kg świeżej kapusty białej 500 g różnych rodzajów mięsa (np. wieprzowina, wołowina, boczek, kiełbasa) 2 cebule 2 ząbki czosnku 200 g suszonych śliwek 100 g grzybów suszonych (np. borowiki) 2-3 łyżki koncentratu pomidorowego 2 liście laurowe 4-5 ziaren ziela angielskiego 5-6 ziaren pieprzu czarnego 1 łyżka majeranku 2 łyżki smalcu lub oleju do smażenia Sól i pieprz do smaku Opcjonalnie: kieliszek czerwonego wina lub wędzonej śliwowicy Przygotowanie: Kapusta: Kiszoną kapustę przepłucz zimną wodą (jeśli jest bardzo kwaśna), a następnie posiekaj. Świeżą kapustę drobno poszatkuj. W dużym garnku umieść obie kapusty, zalej wodą i gotuj na małym ogniu przez ok. 1,5 godziny, aż zmiękną. Grzyby: Suszone grzyby zalej wrzątkiem i odstaw na 30 minut, a następnie odcedź, zachowując wodę z moczenia. Grzyby drobno posiekaj. Mięso: Pokrój wszystkie rodzaje mięsa w kostkę. Na patelni rozgrzej smalec lub olej i podsmaż mięso partiami na złoty kolor. Następnie dodaj do kapusty. Cebula i czosnek: Cebulę posiekaj drobno, czosnek rozgnieć. Podsmaż na tej samej patelni, gdzie smażyłeś mięso, aż się zeszklą, i dodaj do garnka z kapustą. Dodaj przyprawy: Do garnka wrzuć liście laurowe, ziele angielskie, pieprz, majeranek oraz suszone śliwki i grzyby. Możesz również dodać wodę z moczenia grzybów dla głębszego smaku. Gotowanie: Całość gotuj na małym ogniu przez co najmniej 2-3 godziny, często mieszając. Dodaj koncentrat pomidorowy, a także sól i pieprz do smaku. Wzbogacenie smaku (opcjonalnie): Pod koniec gotowania możesz dodać kieliszek czerwonego wina lub wędzonej śliwowicy, aby nadać bigosowi jeszcze głębszy aromat. Odstawienie: Bigos najlepiej smakuje po kilku dniach, więc warto go odstawić na noc do lodówki, a następnie ponownie podgrzać. Powtarzane podgrzewanie wydobywa pełnię smaku. Serwowanie: Podawaj z pieczywem, ziemniakami lub solo. Smacznego!
