Bacon Topped Streusel Cast Iron Skillet Coffee Cake
If you’ve watched an episode or two then you may know I am partial to cast iron skillets. They are easy to cook with, easy to clean when they are seasoned properly, can work in the oven or on the stovetop and you can make just about anything in them!
As always I seek out recipes and then tweak them. In this case, Andrew suggested adding bacon to the topping to get that sweet and savory combination and I thought “why not?”
What you’ll need:
Equipment:
9 in cast iron skillet (or you can use a baking dish)
Stand Mixer or Hand Mixer with a second mixing bowl, whisk attachment, paddle attachment.
Whisk
Wooden Spatula or Spoon
Mixing bowl
Cake tester or toothpick
For the Topping:
1/2 cup sugar
1/2 cup tightly packed light brown sugar
1 tablespoon of pumpkin pie spice
1/4 teaspoon of salt
10 tablespoons melted unsalted butter
2 1/4 cup cake flour
5 strips cooked and crumbled crispy bacon
For the cake:
1 3/4 cup cake flour
2/3 cup sugar
1/2 teaspoon baking soda
1 stick unsalted butter softened
2 large eggs (room temperature)
1 large egg yolk
1 teaspoon vanilla extract
1/2 cup of buttermilk
Step 1. Preheat the oven to 325° F and grease your cast iron skillet bottom and sides with butter.
Step 2. Make the Topping.
• In a mixing bowl combine 1/2 cup of sugar, 1/2 cup brown sugar, 1 tablespoon of pumpkin pie spice, and 10 tablespoons of melted unsalted butter and whisk well.
• Next add 2 /14 cups of cake flour and stir with a wooden spatula until butter combines to make a dough that looks like a bunch of pea shapes. Then set aside.
Step 3. Make the Cake Batter
• Combine in the stand mixer bowl 1 3/4 cup cake flour, 2/3 cup sugar 1/2 teaspoon baking soda, and whisk on low using the whisk attachment.

• Change to the paddle attachment. Then add 1 stick of softened unsalted butter and beat on medium for two minutes.
• Keep on medium speed and add 2 large eggs, 1 large egg yolk, 1 teaspoon of vanilla, and 1/2 cup of shaken buttermilk. Change the speed to high and beat until the batter is smooth and fluffy.
Step 4. Batter and Topping to the Skillet
• Spread the batter evenly as the first layer in the skillet.
• Add the first layer of topping spreading it evenly and lightly press down into the first layer.
• Sprinkle half of the crumbled bacon evenly
• Add the next layer of topping.
• Add the remaining crumbled bacon.
Step 5. Bake
Place skillet on the middle rack of your preheated to 325° oven
• Bake for 40-50 minutes or until cake tester or toothpick inserted at the center comes out clean.
• Allow cake to cool at least 20 minutes before serving

• Enjoy!

    My Mom used Lipton Onion soup too and about a tablespoon of Kitchen Bouquet. That was her real secret. I had never heard of it but it gives the brisket a little sweetness. But, it’s very strong so don’t use too much. You’ll ruin it. And, it’s a secret so don’t tell anyone. LOL 😆

    Can you give me the compete recipe for the hazelnut cake. I’m from PA also and my grandmother always went to the Swiss bakery in downtown Philadelphia and bring us home that cake so I would love to make it. My son loves it and I need that recipe. Thank you.

    As a lifelong fan of Swiss Pastry Shop/ Swiss Haus and having had the hazelnut cake for 50 of my birthdays I can say I’m an expert on this cake. I’ve trained with the chef at Swiss Haus (unfortunately not on this cake) and learned a bit. The cake recipe here is as close to the real thing as I’ve found. Make the Swiss Buttercream! No comparison. This icing is too sweet, very heavy and has too much hazelnut. It should be absolutely light as air and silky smooth. It’s worth learning to make the buttercream (not very difficult if you follow exact directions). My birthday is tomorrow and I asked the chef to make me one. It’s a state secret and she doesn’t make it anymore. So sad for us Philadelphians!!!

    Loved this video, especially now that the Swiss Haus Bakery (fake Swiss Bakery) permanently closed last year . My mother was quite particular with what desserts she liked and, having grown up in Philadelphia, Swiss Pastry hazelnut cake was her most favorite. We lived an hour from Philadelphia so consequently got this cake very seldom so perhaps my memory is off but I thought that the chocolate on the outside was shavings, not ground chocolate. Also, would like to see this made with hazelnut flour and real buttercream icing the authentic way, without the marshmallow cream. Thanks again for a trip down memory lane.
