Why would you use greater than or equal to constraints for demand. Aren't you trying to minimize cost, so wouldn't an = be better?

Because in real life situations its dangerous to try to meet the demand exactly. You should estimate to "atleast" meet demand to have some safety, hence the greater or equal to sign
