Their passion sparked my love for the culinary arts. Now, I'm sharing my passion with you on 'Sara maharaj” cooking UA-cam channel .' It's a tribute to my roots and a family tradition. Curry breadfruit
Curry Breadfruit
Ingredients:
• 1 small green breadfruit (about 2 pounds), peeled, de-gutted, and cubed
• 1 liter water
• 2-3 tablespoons Himalayan salt (for soaking)
• 2 tablespoons cornstarch (for frying)
• 2 cups avocado oil (for frying, or enough to cover breadfruit)
• 2-3 tablespoons oil (for curry base)
• 1 medium onion, chopped
• 4-5 cloves garlic, minced
• 4-5 sprigs thyme
• 3-4 culantro or bandhania leaves, chopped
• 1 hot pepper, chopped (adjust for spice preference)
• 2 tablespoons curry powder
• 3-4 cups boiling water
• Salt, to taste
• 1/4-1/2 cup coconut cream or coconut milk (optional)
Instructions:
1. Prepare the Breadfruit:
• Peel and cut the green breadfruit, removing the core. Cube into desired size.
• In a large bowl, combine water and 2-3 tablespoons of Himalayan salt. Add the breadfruit cubes, cover, and weigh them down with a plate to keep submerged. Soak overnight.
2. Dry and Coat for Frying:
• The next day, drain the breadfruit well and pat it dry.
• Toss the breadfruit cubes with cornstarch to ensure a crispy texture when fried.
3. Fry the Breadfruit:
• In a deep pot, heat avocado oil over medium heat. Fry breadfruit cubes in batches until golden brown and crispy. Remove and drain on a paper towel-lined plate.
4. Make the Curry Base:
• In a large pot, heat 2-3 tablespoons of oil. Sauté onions until they start to caramelize, then add chopped bandhania and thyme.
• Stir in the curry powder, allowing it to cook down until aromatic. Add garlic and hot pepper, cooking briefly to avoid burning.
5. Combine and Simmer:
• Add the fried breadfruit to the pot, stirring to coat in the curry mixture. Pour in 3 cups of boiling water, or more if you prefer a saucier curry.
• Let the curry simmer until the breadfruit absorbs the flavors and becomes tender.
6. Add Coconut Cream:
• When the curry is nearly finished, stir in coconut cream or milk for richness (optional). Adjust salt to taste and cook a few more minutes to blend flavors.
7. Serve:
• Serve warm, enjoying this rich and flavorful Trini-style curry breadfruit!

When I come down to Coconut Creek, this is my spot, Aunty knows me very well. They do make a very good doubles and by far the best doubles in South Florida. I did a doubles hopping event a year and half ago and by far they are the best. Do enjoy Sara~!

@@Saras_Kitchen1 Hi I does make it I does put everything in the food processor my husband is very sick my children does not want me to make anything he would want to eat and he can’t I’m from Trinidad so everything we does make and eat my husband is getting problems breathing he’s a heart patient and he was hospitalized and they sent him home I’m just busy taking care of him you take care bye.❤️🙏
