What happened to the white guy who started cooking? You know it’s the local people that are the true cooks and who the heck puts carrots in chicken long rice. That’s the Haole version.

I had my lovely lunch ladies sign my high school yearbook when I graduated because no matter what I was dealing with, they always brightened my day. They also helped to encourage a positive attitude about food as they never moralized our food choices. They treated pizza and tatertots the same as a custom salad and bottle of water, so I never felt uncomfortable choosing what I actually wanted to eat that day.

Well done Ma'am, everyone deserves a positive mother figure.

Ginger and garlic are the main aromatics for this dish. Original HaYn Long Rice is those 2 ingredients, shredded chicken, broth, glass noodles, green onions for garnish, and seasoning. That's it. But anyone can add anything they like, especially when they don't call it Hawaiian Long Rice.
