**For the Crust:**
- 100g crackers (crushed) (1 cup) (about 3.5 oz)
- 50g melted butter (1/4 cup)(about 1.75 oz)
- 20g sugar (1.5 tablespoons) (about 0.7 oz)
**For the Cheesecake Filling:**
- 150g sugar (3/4 cup)(about 5.3 oz)
- Zest of 1 lemon
- 400g cream cheese (1 3/4 cups)(about 14 oz)
- 20g flour (2 tablespoons) (about 0.7 oz)
- 40g lemon juice (1/4 cup) (about 1.4 oz)
- 180g heavy cream (3/4 cup)(about 6 oz)
- 3 eggs
- 5g vanilla extract (1 teaspoon) (0.2 oz)
**For the Strawberry Topping:**
- 300g strawberries
- 50g sugar (1/4 cup) (about 1.75 oz)
- 15g (1 tablespoon) lemon juice (about 0.5 oz)
- 10g starch (1 tablespoon) (about 0.35 oz)
- 30ml water (2 tablespoons)

Instructions👩🍳
1. Prepare the Crust:
- Preheat your oven to 160°C (320°F).
- Mix 100g crackers, 50g melted butter, and 20g sugar in a bowl.
- Press the mixture into the bottom of a springform pan.
- Bake for 10 minutes, then let it cool.
2. Prepare the Cheesecake Filling
- Mix 150g sugar and the zest of 1 lemon in a bowl.
- Add 400g cream cheese to the sugar mixture and mix until smooth.
- Add 20g flour and mix until incorporated.
- In a separate bowl, beat 40g lemon juice and 180g heavy cream until slightly thickened.
- Combine the cream mixture with the cream cheese mixture.
- Add 3 eggs to the cream mixture, one at a time, mixing gently after each addition, being careful not to overmix. Add vanilla extract and mix until incorporated.
- Pour the filling over the cooled crust in the springform pan.
3. Bake the Cheesecake
- Reduce the oven temperature to 150°C (300°F).
- Place a cup of water in the oven to create steam.
- Bake the cheesecake for 70 minutes.
- Turn off the oven and leave the cheesecake inside for an additional 15 minutes.
- Remove the cheesecake from the oven and let it cool at room temperature for 1 hour.
- Refrigerate for at least 3 hours, preferably overnight.
4. Prepare the Strawberry Topping
- In a saucepan, mix strawberries, sugar, and lemon juice.
- Cook over medium heat for 5 minutes.
- Mix starch with water until smooth, then add to the strawberry mixture.
- Cook for another 3 minutes on low heat, stirring constantly.
- Remove from heat and let it cool to room temperature.
5. Assemble and Chill
- Pour the cooled strawberry topping over the chilled cheesecake.
- Refrigerate the cheesecake with the topping until ready to serve.

Hi, my second time, making it, it is becoming all time favourite I am going to make it often, because I love it. This time it raised to the desired height. But of course I put a bit of soda bicarbonate into it.
Came to do an update....made it last week and it stayed moist until the very end...the icing was delicious...the only thing I did different was put 2 eggs (I don't like eggs or eggy smells) instead of three and a little less flour...my mom loved it...about to make another one in about 10 minutes!!...awesome recipe!!!❤

Hi, you did not mention baking powder/ bicarbonate so I did not put any, it became thin, but it's good. Or your flour is self-raising? I do not like those. Anyway, I shall keep your recipe, I changed the glazing but other than that I just put less sugar, which is normal in my case.
There is no baking powder in the recipe. The flour is also all-purpose flour, there is nothing extra in it. The recipe itself rises with the effect of eggs 😊

I made it but it was an epic fail something was seriously off and all I changed was extra zest…..certainly didn’t come out looking anywhere near as good…..AND it had a very eggy taste not palatable at all
I'm really sorry to hear this 🥲 We always try to explain the recipe in detail. Maybe the egg wasn't mixed properly or wasn't fully baked in the oven.
@@propercooking thanks for replying I really don’t know normally I would cream the butter and sugar and beat the eggs one by one or perhaps the eggs were just too large not really sure but I noticed when I poured the batter into the tin the batter had curdled maybe I did something wrong but I cant think what it could have been 😐
@@cloudydaezperhaps the eggs were too cold. They should be at room temperature or curdling is likely to occur. Uncurdle by adding a little flour at a time and mixing well.

I keep the cream in the refrigerator. That's why it's thicker than normal. You can use any cream with 35% fat content 😊

I am sorry for not being clear to you. In the video, after adding flour and baking powder, vanilla extract is added. The vanilla extract I use is in powder form, but you can use the same amount of any vanilla extract.
In the video it says 1 tablespoon, but upon the comments of other viewers who made the recipe, I reduced the recipe to 2 teaspoons. Because different brands of powdered sugar do not give the same result and it remained liquid than it should have been. You can use the measurements written in the description section.

You can reduce the sugar if it suits your taste better, but there may be a difference in texture. I think the amount of sugar in the cake is just right. If you want to make it with less sugar, you can reduce the amount of frosting on it, it even tastes great without frosting.

It could be. If it is more liquid than it should be, you can put it in the freezer and freeze it for 1-2 hours and make it like lemon ice cream 😊
