Ingredients of Ilish Fish Biryani:
1. ইলিশ মাছ / Ilish Mach / Hilsa fish (8pc).
2. Basmati rice (200 gm/2 cups).
3. Fried onion (1 big size).
4. 2 bay leaves.
5. Garam masala.
6. Ginger paste (1 tsp).
7. Slitted green chilli (4 no).
8. Turmeric powder (1tsp).
9. Red chilli powder (½ tsp).
10. Warm milk (½ cup).
11. Black pepper powder (½ tsp).
12. Cumin powder (1 tsp).
13. Plain yogurt (½ cup)
14. Salt (as per your taste).
15. Mustard oil (4 tbsp).
How to make Ilish Biryani:
1. Boil water and add ½ tsp salt, garam masala, bay leaves, and 1 tbsp refined oil. Mix it well.
2. Add soaked basmati rice. Cook the rice 80% and then strained out the water.
3. Marinate the fishes with ½ tsp salt and ½ tsp turmeric powder. Keep it for 10 to 15 min.
4.Add some ginger, green chili and garlic and make smooth masala paste.
5. Add 4 tbsp mustard oil in hot pan.
6. Fry oninon.
7. Fry the fish for only 1 min both side. Keep aside.
8. Then add masala paste and green chilli in oil. Cook it for 1 or 2 min in medium flame.
8. Add ½ cup yogurt. Cook for 1 min in medium flame.
9. Add fried fish and cover it for 5 min in medium flame.
10. Take big utensil for making biryani.
12. Add ½ portion of rice on it.
13. Add fishes and some gravy on it.
14. Add half amount fried onions.
15. After this add rice again. Add fried onions and some gravy.
16. After this close the lid.
20. Now cook it for 15 min in low flame.
21. After 15 min put off the oven and keep it for 10 min.
22. Hilsa Biryani is ready.
23. Open the lid and serve hot Ilish
