I'm Hülya, mum to 4 amazing children. My aim for this channel is to share the delicious, traditional Turkish dishes I grew up with as a Turkish Cypriot in London. As well as give my take on some of my favourite non Turkish dishes.

QUICK & EASY FISH SOUP - KOLAY BALIK ÇORBASI
QUICK & EASY FISH SOUP
Ingredients:
800g frozen skinless/boneless white fish (allow to thaw)
400g frozen uncooked king prawns
2 onions
1 capia pepper
1 bell pepper
2-3 potatoes (480g)
2-3 carrots (240g)
2 sticks celery
5-10 garlic cloves
400g plum tomato (1 tin)
60g unsalted butter
2 tbsp olive oil
3 tbsp cornflour
1/2 tsp black pepper
1 tsp salt
1 tsp mixed herbs
1 tsp chilli pepper
freshly chopped basil (approx 10 leaves) & to garnish
2 Lt stock (homemade/stock cube & water)
HOMEMADE CHICKEN STOCK
Ingredients:
1 kg chicken
parsley stems (approx 15)
4 bay leaves
1 tbsp salt
Juice of 1 lemon
7 whole peppercorns/1 tsp black pepper
Method:
Thaw the fish ahead of time (leave overnight in the fridge if possible). Chop all the vegetables into small pieces and put aside. Saute onions in a large (2-3 litre capacity) pan using melted butter and olive oil. When translucent, add the chopped peppers and carrots. Stir for a few minutes until they soften then add the chopped celery. Reduce the heat and continue stirring. After a few minutes, add the chopped potatoes and cook for 5 minutes, stirring continuously. Add the garlic, tomatoes, seasoning and stock. Mix then cover and cook on medium heat for 45 mins, whilst you prepare the fish. Cut the fish into 3cm square pieces. After 45 mins, add the fish to the pan. Cover and cook for 15 mins, then add the freshly chopped basil leaves and cornflour which should be dissolved in a small amount of cold water. Mix to blend until the sauce thickens then cover and cook for a further 10 mins. Adjust consistency and seasoning to your taste. Serve with white rice or fresh crusty bread and enjoy!

@@HulyaTurkishKitchen It turned out really well. I made it today for dinner and my guests and I enjoyed it. It's a hearty, warming but not heavy soup, so just the right thing for a rainy February day over here. And the soup has a beautiful colour due to the tumeric and a pleasant aroma with the parsley, garlic and chili. Really nice! I like your other recipes too and enjoy the more unusual ones especially (well, unusual to me at least as this kind of Turkish cuisine has been nearly unknown for me before). But while this soup now was a bit simpler in terms of ingredients and working steps than for instance some of the pastry or meat dishes you show us here, it is definitely also a confirmed crowd pleaser when a few more guests than usual come by for a visit. I'll certainly make it again.
