5:48: Tbh, italy isnt being homophobic, he's reacting to the reaction of the waiter. If they werent in public, he wouldnt have reacted like that. After all, his first reaction wasnt disgust: his first reaction was "wow, thank you!" Its not until the waiter reacted to it that Italy got scared. Moreover, He just said "its weirdly out of character from Germany" / "Its not Germany's style", not that its weird that a guy is doing it.

Why does Germany have blue eyes, when in the anime he has green eyes? Or is it my impression, does it change color? What's wrong? 🤔
He's always had blue eyes in both anime and in the manga. He is supposed to look like a bona fide German after all, and they stereotypically have light hair and skin + light coloured(blue, usually) eyes.
