The descriptions of consistency were open to interpretation. Different manufacturers had different ideas of how thick each stage should be, as this video shows. The future is an international standard of measurement: IDDSI.org

Great video. I'm just confused about the part with the first graph. Why is the viscosity represented with a line rather than a numerical value. We know the viscosity is the gradient of the line, so are you saying the viscosity for the same fluid will change at a different shear stress?
