Pumpkin Pecan Pie
Ingredients:
1 x 425g tin pumpkin purée
1 puff pastry sheet (pre-rolled)
3 large free-range eggs (separated)
175g golden caster sugar
3 teaspoons vanilla bean paste
100ml double cream
¾ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground allspice
1 whole nutmeg (for grating)
4 tablespoons maple syrup
150g pecans (roughly chopped)
Instructions:
🍏Preheat the Oven: Preheat your oven to 180°C (350°F), or 160°C (fan).
🍏Prepare the Pastry: Line a 23cm pie dish with the puff pastry, pressing it into the edges. Trim any excess and prick the base lightly with a fork. Chill the pastry in the fridge for 15 minutes.
🍏Separate the Eggs: Separate the eggs, placing the yolks in one bowl and the whites in another.
🍏Make the Pumpkin Filling: In a large bowl, whisk together the pumpkin purée, egg yolks, golden caster sugar, vanilla bean paste, and double cream until smooth.
🍏Add Spices: Mix in the ground cinnamon, ginger, and allspice. Grate about 1/4 of the whole nutmeg directly into the mixture. Stir until the spices are fully incorporated.
Whisk the Egg Whites: In a separate bowl, whisk the egg whites until they form soft peaks. Gently fold the whipped egg whites into the pumpkin mixture. This will create a lighter, fluffier texture for the filling.
🍏Fill the Pastry: Pour the lightened pumpkin mixture into the chilled puff pastry shell, spreading it evenly.
🍏Bake: Bake in the preheated oven for about 45-50 minutes, or until the filling is set but still has a slight wobble in the center. If the edges of the pastry start to brown too quickly, cover them with foil.
🍏Prepare the Maple Pecan Topping: While the pie is baking, prepare the pecan topping. In a small saucepan over medium heat, combine the maple syrup and pecans. Stir continuously for 3-4 minutes until the pecans are coated and the syrup thickens slightly. Remove from heat.
