Chicken Tikka Platter for Barbeque Parties #newyearparty 3 types of chicken tikkas Simple Recipe
Barbeque Chicken Platter
Ingredients
Chicken Thigh pieces : 600 gms
Red Marination
Red chilli powder : 2 Tbsp
Jeera Powder : 1 tsp
Corriander Powder : 1 tsp
salt to taste
Mustard oil : 2 tbsp
Curd : 5 tbsp
White Marination :
Pepper Powder : 1tsp
Jeera Powder : 1 tsp
dhaniya powder : 1 tsp
Ajwain : 1/4th tsp
Ginger Garlic paste : 1 tbsp
Fresh Cream : 2 tbsp
Curd : 4 tbsp
Green Marination
Corriander ; 1 cup
Mint leaves : 1/2 cup
Green chillies : 3 to 4
Ginergarlic paste : 1 tbsp
salt to taste
lime juice of half lemon
dhaniya powder ; 1 tsp
Jeera powder : 1 tsp
Curd : 4 tbsp
Method
1st Marination
In a bowl add chicken thigh boneless pieces
Then add all the dry ingredients and then lastly add curd and mix well cover it and keep it aside for 30 minutes
2nd Marination
In a bowl add chicken thigh boneless pieces and add all dry ingredients then add cream and curd and mix well and at aside for 30 minutes
3rd Marination
In a mixer jar add coriander, green chillies, mint leaves , ginger garlic paste , salt and lime juice add little water and grind it into a fine paste
In a bowl add chicken thigh boneless pieces and add this green masala paste then add coriander powder jeera powder and curd and mix well keep it aside for 30 min
Assembly and Cooking Process
Take skewers and start arranging the marinated chicken in them
Make all the skewers ready and keep it aside
Get the coal ready for the barbeque
Then arrange each of the skewers nicely on the barbeque
Keep turning slowly to avoid overcooking or burning of the chicken tikka
Then brush it with melted ghee or butter for the taste and shine on them
Don't over cook the tikkas
Approximately 30 minutes should be enough to make the tikkas perfect
They should remain juicy and succulent
After they are done remove them with the help of the fork in a plate serve with onion rings and lime wedges
