You don't have to "know that you only want to date that person from day one", but you have to make a choice or at least prioritize after some time. You can still go out with other people during that time. But if you feel like going out with everyone but him/her in the early days of a relationship, it may be a clue that you don't care a lot about them. I don't see myself mentioning how many other girls I kissed last week while dating some other girl. I could lie or hide things to her, but this sounds like the worst way to start an honest relationship... Unless you don't expect it to be exclusive. The fact that your partner introduce you as his girlfriend is also a way to tell you how he sees you, you don't have to agree with him. You are still able to take your distance or have a private conversation later. Just like you would do with someone asking you to be his girlfriend. In French schools, some young teenagers ask eachothers if they want to "go on a date" or "be their girl/boyfriend" but it's usually very innocent and doesn't imply much. Do you also need to ask someone if they want to be your friend before thinking of them, or calling them, a friend?

Regarding the so called "dating culture" in France, it matches what l experienced when I was younger. So it has not changed so much. I guess the "girlfriend" step in France, is to be considered as an exclusive dating. And yes "the kiss seals the deal". And the "je t'aime" step in very close to an shojo anime grade confession. It is indeed very emotional. You should not hesitate however to ask for clarifications. We are family oriented indeed. That is considered to be a marker of good sociability to have family bonds and we see it as a necessity in the hostile world as well as the fabric of our society. l was surprised that you find Frenchmen able to express their feelings. I believe that we are not so good at that. You probably stumbled upon a bf that have food emotional intelligence and are aware the with foreigners, better communication is necessary to make such a romantic relationship fly. You probably have a knack to attract such persons. Finally, the dating behavior is very class dependent in France and you may have very unpleasant macho experiences with less educated men (to my utter shame)

Judo and Aikido.. not bad for a START, but to face real danger, i could really not suggest you better than joining a Bujinkan group. Krav maga, thaï boxing are far too violent and unable to adapt to low level of violence, where you still have to force someone letting you go off their grip, but without hitting them or pocking some eyes out.. that will lead you to jail. Sincerly, try it.. True involved Budo pratcitioners aren't bad people. they mostly seek for what Hatsumi Masaaki said : "i'm not teaching you how to fight, but how to control Evil" . You can find places on google, or i can make some research if you wish to.. but i'm not saying that for knowing your living area. Anyways, really wishing you all the best. I get stared a lot too in some countries here in Europe, and when I lived in Japan it was even worse - they'd even take pictures of me. Although people might be just curious because they don't see people like us that often, it can be extremely uncomfortable at times... I think "do I have something on my face? or my hair? are my clothes dirty?" 😅 in my country we know how to not make it so obvious that we're looking at someone, but I guess it's not like this everywhere lol
