Here's a simple and delicious Rajma (kidney bean curry) recipe:
Ingredients:
1 cup kidney beans (rajma), soaked overnigh
1 large onion, finely chopped
2 medium tomatoes, pureed
2-3 green chilies, slit
1 tablespoon ginger-garlic paste optional
1 teaspoon cumin seeds
1 teaspoon garam masala
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
2 tablespoons oil or ghee
Salt, to taste
Fresh coriander leaves, for garnish
Instructions:
1. Prepare the Kidney Beans: Drain the soaked kidney beans and rinse them. In a pressure cooker, add the beans with 4 cups of water and a pinch of salt. Cook for about 15-20 minutes until soft. (If using canned beans, skip this step.)
2. Make the Base: In a pan, heat the oil or ghee. Add cumin seeds and let them splutter. Then add the chopped onions and sauté until golden brown.
3. Add Aromatics: Stir in the ginger-garlic paste and green chilies. Cook for another minute until fragrant.
4. Tomato Purée: Add the tomato purée and cook until the oil separates from the mixture. This usually takes about 5-7 minutes.
5. Spices: Add turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
6. Combine Beans and Gravy: Add the cooked kidney beans to the pan. Pour in some water to achieve your desired consistency. Simmer for 10-15 minutes to let the flavors meld.
7. Finish: Stir in garam masala and adjust salt if needed. Cook for another 2 minutes.
8. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with rice or roti.
