Can I do something like this, but more basic with my class 7s?
Yes, this can be done as early as 3rd grade if done wet on wet. 7th grade do simple veiling.

Why was this particular motif with the tree and waterfall suggested?
Nature moods for the adolescent are especially suitable; the outer world--subtle elemental interaction of light, air, water and earth.

Hello Mr.Van James, thanks for your videos, your paintings are lovely and airy. Right now I am a 4 th grade Waldorf teacher. As I am not experienced yet (I just started teaching), can I ask you, what other topics can I use for the 4 th grade kids to paint ? ( except animals) I would really appreciate the answer.
for more information, it's kids first year at Waldorf.
Paint maps and scenes of local geography, Norse mythology and indigenous stories, and of course more animals. Take a look at my book Painting with Hand, Head and Heart for detailed indications of all grade level painting.

Yes, you need to determine just how thick or thin you want the color-- whether you're painting wet-on-wet or wet-on-dry. The Lotus painting (wet-on-dry) should be thin--more water. Always test it on a scrap paper. Good luck!
