I'm learning at 60, you're just a baby mate lol. It's amazing what you can do now with Blender and a 3D printer.

Approaching 40 here. similar story. long term desire and love to do blender for fun and for series projects. your workflow would be definitely useful.

So in my experience (and maybe it has nothing to do with your problem) whenever I have that issue where armatures or modifiers break my objects its almost always the transforms, scale being the biggest offender. for some reason blender does not like it when the scale of the object is not 1.00 and it causes weird behavior. I know that it was one of your steps to apply transforms but did you try just applying the transforms and then checking the objects? also make sure the armature itself has a scale of 1.00 (apply transforms) as that can mess with this too. In all honesty the method that javidam66 pointed out with the collections is probably more suited for this type of object since it has no moving parts but I'm sure at some point you will be interested in using armatures so it would be a good problem to solve
