4:30 -ish, you ask about skeletons having ears. Technically they do! While the skeleton would obviously lack the cartillaginous exterior structure of the ear, they do still have the ear canal structure from the outer ear into the skull. More importantly, they have all of the bones of the inner ear, which are the important structures for hearing. ... except for the auditory nerve and the brain... Presumably magic replaces the soft tissues for ears like it does for every other aspect of animating skeletons.
