This is NOT your average cooking channel.
The videos accompanying the stories are recipes that I have collected over the years and my personal favorites from my memories and recipe journals.
In my 13 years in the restaurant industry, I have experienced every job from bus boy and waiter (to which I've set a customer on fire), to glorified dishwasher, stock boy, prep cook, pastry chef, line cook, all the way up to junior sous chef (to which I've come very close to involuntary manslaughter). And in those years, I have experienced some absolutely crazy sh!t where simply hearing these stories will make your ears bleed and question the sanity of those who cook your food.
And I'm going to tell you every single juicy one. :)
Be forewarned now viewer; you will hear tales of excessive drug use, sexual depravity, revenge on entitled customers, and pure unadulterated depravity...and these events go on in your favorite eatery, whether you know it or not.

This is a tweaked version of chef Chris Cosentino's original Leg Of Beast from his now closed restaurant Incanto. While I never had this dish at the restaurant, I worked on my own version and try to pay homage to his concept. I'm showing my failures as well as my success'. Why? because you can't learn and adapt if you don't make mistakes. Scrambled eggs: start with a cold pan, add just a tbsp of sour cream. Omelette: for every egg, use one tbsp of water, helps fluff them up. Not even going to talk about the deviled egg.

Good life lesson to learn: sneaky deviant cooks and pissed off crustaceans are never a good mix. Here's why. I’m doing a Thors hammer for guests on NYE - is 375* for 8hr the same temp and time if I’m only doing 1 instead of 3? Was there a reason you didn’t brown the meat before adding the braising liquid? I’ll probably add wine to my braising liquid along with the beef stock.
I am a big fan of beef Shank, IMO, that is the best meat on the animal. Yeah braising takes a long time but I put it in oven with timer and go to sleep.
