Steamed spicy rice-powdered beef is one of the old traditional Sichuan cuisine.
If you learn this dish, you can also use the same way to make steamed pork, steamed chicken flat wings, steamed ribs. This video also contains how to make spicy rice-powder for steamed meat dishes. The freshly made rice noodles have a strong aroma of fried rice, and is super easy to make, just a little patience.
If you don’t have a bamboo steamer, just use silicone or stainless steel steaming rack.
2~3 servings
Preparation time: 30-40 mins
Cooking time: 30 mins
Ingredients:
Eye of round or Eye of steak or Beef Tenderloin 500g
--- Beef Marinade ---
Salt 2.5g
Sugar 10g
Vegetable oil 50g
Rice wine 20g 米酒
Soy sauce 30g 酱油
Pi Xian Broad Bean Paste 30g 郫县豆瓣
Sichuan peppers 20 花椒
Ginger 40g
Green onion 30g
--- For Rice Powder
Rice 1/2 cup (dry uncooked rice, don't soak)
Sichuan peppers 12~15 花椒
Cinnamon (small stick) 桂皮
Aniseed (a whole one) 大料
--- For serving
minced garlic and coriander (optional)
Lots of Chili oil (if you prefer spicy flavor)
You also need a pan without non-stick coating and a blender.

    That’s not a marinade. You need liquid to marinade. Next time, add oil, an egg and some shaokao seasoning, heavy on the cumin.

    Superb. I made this but slightly different. I made this with ground cumin , dry roasted red button ground chillies , dry ginger and garlic powder, Chinese all spice, (garam masala) And taste was so good. I will try this method.

    do you add the cumin and red pepper to the meat marinade or just sprinkle it while you barbecue?

      Yeah I think the author forgot to mention that they put or chilli powder or paprika clearly there's something other than just cumin and salt going on at the end

    make sure the internal temperature reaches 165F before you pull the duck off. I did 45 mins like the video stated but my duck came out kind of not fully cook

      I believe he did add any salt during cooking, because when we wrap it up we dipped the meat into tianmian jiang which should get you enough flavor
