Recipe makes 1050g.
Dough:
Strong Bread Flour: 85% (490 g) - P&H Milling Strong Bakers Flour
Whole Wheat Bread Flour: 15% (86 g) - Robin Hood
Water: 59% (340 g) @ 90f
Salt: 2.5% (14 g) - Diamond Crystal Kosher Salt
Levain: 20% (115 g)
Sourdough starter: 38 g @ 100% hydration
Strong Bread Flour: 19 g
Whole Wheat Bread Flour: 19 g
Water: 38g @ 90f
