The other two plates showed one of the two typical Nuremberg/Franconia specialties: the "Nürnberger Bratwürste mit Sauerkraut." The name is obviously the give away. The other Frankonian specialty would have been "Schäuferla (Schäufala or Schäufele) mit Klos." A flat pork shoulder served with the bone and a large (or two) dumplings (sometimes with sauerkraut or the likes too) with a dark sauce. If made perfectly simply heavenly.
