I really like the approach of explaining with analogy instead of talking in fully "academic" mode where people get lost in the meaning due to possibly unfamiliar terminology, especially who did not study the topic or new to it.

I'm confused about bootstrapping; if the server can encrypt the value of X with it's own key. And then decrypt the value of X when it's in Y; aren't both the decryption keys present on the server then? Because that would defeat any confidentiality goals. Or is bootstrapping done client-side?
The bootstrapping key is a public key, so the server doesnt need to decrypt anything or have the private keys

I have a question regarding the API. Shouldn't it be a Ciphertext in the rescale signature at 19:10 ? Is there a case where we need to rescale a Plaintext at all?

Hi. we dont need to rescale a plaintext. Acctually, in the vedio, it's a ciphertext, in which a message(plaintext) hides.
