I never met a homemade cookie I didn't like, whether caky or crispy or chewy. But in recent days/weeks/months, I've really found myself drawn to cookies that are flat-out… well, flat. Whether they're crispy or chewy, I don't care. I just love the flat, non-cakey texture.
So yesterday, in between the nine loads of laundry I knocked out, I set out to make chewy oatmeal cookies, partly because I discovered that I was in possession of six (!) large containers of oats. Why did I have so many oats? What was I trying to prove? Anyway, it turns out that brown sugar-not the oats-is really the star of the show (hence this recipe's title) and the result is a type of cookie that's as good at room temperature as it is warm straight out of the oven. You could even use two to make an ice cream cookie sandwich with vanilla ice cream or even cinnamon ice cream.
How long do you beat the butter and brown sugar?
I'm glad you asked... this is important! You should beat the brown sugar and butter on medium-high speed for three to four minutes. This may seem like a long time, but it's important for the texture of the cookies. The oats make the dough dense, so you need to incorporate air into the dough during this step or you'll end up with super flat, spread-out cookies.
Should I use light brown sugar or dark brown sugar in oatmeal cookies?
Use dark brown sugar. It has a richer, more molasses flavor compared to light brown sugar that is so good in these cookies.
What kind of oats do you use in brown sugar oatmeal cookies?
Go for old-fashioned oats or rolled oats (they're the same thing, but sometimes go by one name or the other). They result in the perfect chewy cookie. Using quick oats can change the texture of the cookie and make it dry.
What can you add to brown sugar oatmeal cookies?
I kept it simple with this oatmeal recipe, but some nuts would be delicious thrown in. Try adding 1/3 to 1/2 cup finely chopped pecans to the dough. They'll give the cookies wonderful nutty flavor and some crunch. Or you could add raisins if that's your thing.
Can you freeze brown sugar oatmeal cookies?
Yes, you can freeze the cookies fully baked, stored in an airtight container for up to 3 months. You can also freeze the unbaked cookie dough for up to thee months. Go ahead and scoop the dough into balls, then place them on a parchment-lined baking sheet. Place the baking sheet in the freezer until the dough balls are frozen solid. Then transfer the dough balls to a zip-top bag. The dough can be cooked from frozen, but you'll need to add a minute or 2 to the bake time. Just keep an eye on 'em!
Ingredients
1 c. salted butter, softened
2 c. packed dark brown sugar
2 tsp. vanilla extract
2 eggs
1 3/4 c. all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
3 c. old-fashioned oats

Preheat the oven to 350˚F.

In the bowl of an electric mixer (or using a hand mixer), beat together the butter and brown sugar until fluffy. Beat in the vanilla. Add the eggs, one at a time, beating after each addition and scraping the bowl as needed.

In a medium bowl, whisk together the flour, salt, and baking soda. Add the flour mixture to the butter mixture in 2 to 3 parts, mixing until just combined after each addition. Mix in the oats until just combined.

Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto a lightly greased cookie sheet, spacing them a couple inches apart. Bake for 12 to 13 minutes or until dark and chewy. If you'd like a crispier cookie, just cook a little longer!

After removing them from the oven, let the cookies cool slightly on the pan, then transfer the cookies onto a plate for serving.
Tip: A 3-tablespoon scoop will yield 24 jumbo cookies. A 1 1/2 tablespoon scoop will give you 36 cookies.

Hello Mrs. Drummond - PL I saw a recipe of you Best ever chocolate sheet cake that you said your Mother -in- law gave you. You are absolutely right about that. I am nearly 67 and I have been making this for my kids and family for years. My mother made this recipe, probably like the way it was given to you. My Mother gave it to the school cafeteria people after they tried one of hers and for years they would make it in the oversized baking pan. Cut and server up like brownies with pecan on top. My mother showed me how to make this when I was very young. To this day I don’t need the recipe , know by heart.. and it does stay moist the longer it sits. My mom just passed a few months ago at 85 bless her heart. I love you you Mom. There was always one of these in the freezer on standby.
