Well you arent really supposed to fight them. A big part of the intended gameplay is picking your battles, this is taught early on with the 2 blue knights and dragon in lothric castle part 1. The intended idea here is to run away and cut fown the bridge to prevent them from following you. This also reveals a "secret area" below the bridge. Solid effort in that fight tho
