Outside of the 5 hrs, how do you store the ice besides the IGLOO? For instance, if you don't sell it all that day?
Put the bucket back in a chest freezer at your house.

You do not need a license to purchase Italian Ice. You may have to make some calls to find a wholesale company in your area.
